Description
The Barolo Rocche di Castiglione di Sordo comes from vineyards located in the municipality of Castiglione Falletto, in the province of Cuneo.
It is produced with 100% Nebbiolo grapes, harvested and selected entirely by hand. Fermentation takes place in stainless steel tanks at controlled temperature, with maceration of 4-6 weeks in contact with the skins depending on the vintage. Subsequently the wine ages for 24 months in Slavonian oak barrels and ages in steel, for 4-6 months, and for a further 6 months in bottle, before being placed on the market.
The Barolo Rocche di Castiglione di Sordo has an intense ruby red color. The nose opens with a large and persistent bouqet, with hints of licorice, mint and ripe red fruit, which leave room with time to hints of resin and sweet spices. On the palate it is full and well structured, with a perfect balance between acidity and tannins.
Excellent with roasts, this wine is ideal to accompany all game dishes.
