Description
Barolo di Monforte d'Alba, from the Castelletto sub-area, produced by Josetta Saffirio, is a mirror wine of three types of soil, silt, sand and clay in balanced proportions, enriched by a good presence of mineral salts.
It is produced from Nebbiolo grapes of the Michet sub-variety. The vinification takes place through soft pressing of the hand-picked grapes, with consequent fermentation at a controlled temperature and maceration of 7-9 days at the end. After the malolactic fermentation, the wine rests in new and second passage wooden barrels. After 24 months it is assembled and stabilized in concrete tanks, after which the wine is refined for another 6 months in the bottle.
Garnet red in color with ruby reflections, it releases an intense aroma of vanilla and toasted hazelnut on the nose, with hints of licorice, tobacco and blackberry. On the palate it is a wine of great structure and charm, on well-smoothed tannins.
It goes well with braised meats, game and all main courses based on red meat. Unmatched when paired with a platter of aged cheeses.
