Description
Domenico Clerico's Barolo Pajana comes from the vineyards of the renowned Ginestra additional geographical mention, located in Monforte d'Alba, at an altitude of 340 meters above sea level, on soils composed of silt, sand, clay and active limestone. This red wine reflects the richness and complexity of the territory with an east and south-east exposure, which gives the Nebbiolo grapes optimal ripening.
The winemaking process involves a traditional process with fermentation at a controlled temperature, followed by aging in barriques and large barrels. This method allows the wine to develop its robust structure and complex aromatic notes, ensuring a balance between power and finesse.
A beautiful bright garnet red, the nose reveals intense hints of berries such as blackcurrant, sweet spices and delicate floral nuances. On the palate it is rich and structured, with velvety tannins and a persistent finish, which reveals notes of licorice and tobacco.
Perfect to pair with red meat dishes, braised meats or game, as well as mature cheeses.
