Description
The Barolo Paiagallo of Casa E. di Mirafiore was born in the vineyards located in the La Villa vineyard, in the extraordinary municipality of Barolo. Barolo Paiagallo is a Free Wine, produced through the use of advanced models of sustainable agriculture, reducing the environmental impact and safeguarding the health of the consumer. The wineries that adopt the Free Wine project, choose to commit themselves to the recovery of the soil, enhancing its fertility.
It is produced exclusively with Nebbiolo grapes. After the harvest, the grapes are de-stemmed and crushed at a temperature of 32-33 °C, with continuous pumping over which give the wine the extraction of large quantities of tannins and colour. Fermentation takes place for 20-30 days at controlled temperature. Subsequently the wine ages for 12 months in barrique, for 12 months in oak barrels and for a further 12 months in bottle.
Paiagallo is characterized by a ruby red colour, with garnet reflections. The nose opens with a rich fruity bouquet, with hints of cherry, blackberry and plum, enriched with pleasant spicy notes of cinnamon, cloves and black pepper. On the palate, it is pleasantly soft and sweet tannins that give a sensation of freshness in the finish.
Perfect to accompany red meats and aged cheeses, it is ideal as a meditation wine.
