Description
Barolo Fossati di Borgogno is produced in the cru of the same name, a vineyard that benefits from a soil composed of a surface layer of sand followed by silt and clay, ideal for the cultivation of Nebbiolo.
The vinification was carried out with spontaneous fermentation in cement for approximately 18 days, followed by submerged cap maceration for 20 days and aging in Slavonian oak for 2 years and 8 months.
It has a clear ruby red color. On the nose, there are hints of fresh fruit and black cherries, light spiciness and herbaceous notes. On the palate, a crisp and slender fruit emerges, accompanied by pleasant retronasal hints of spices, with an elegant tannic texture.
This Barolo pairs beautifully with important dishes rich in flavour, such as traditional Piedmontese meat second courses, boiled meats and stews.
