Description
The Barolo from the Conte di Villa da Filicaja Collection is obtained from a selection of grapes from different municipalities in the Barolo area, including Castiglione Falletto, Cherasco, Diano d'Alba, Verduno and Grinzane Cavour.
It is produced with Nebbiolo grapes only, harvested exclusively by hand in October and fermented with maceration for 14-16 days at a controlled temperature of 28-30 ° C. Once the malolactic fermentation is complete, the wine undergoes an aging of 38 months in mixed oak barrels, of which at least 18 in French oak barrels.
Intense garnet with orange reflections to the eye, it explodes on the nose in an elegant floral bouquet of violets, sprinkled with notes that recall small red fruits and leather. In the mouth it is structured and harmonious, pleasantly soft and persistent.
Recommended with mushroom-based first courses, it is perfect with typical Piedmontese cheeses and white truffle from Alba. Try it in combination with stew or game.
