Description
Barolo Castelletto del Castello di Perno is a red wine obtained from 100% Nebbiolo grapes grown in the Castelletto sub-zone, in Monforte d'Alba in Piedmont.
The vinification involves destemming and the preparation of a pied-de-cuve about 10 days before the harvest, which is added to the crushed grapes. Fermentation occurs spontaneously without added yeasts, with maceration in contact with the skins for about 35 days at a controlled temperature. The refinement lasts at least 18 months in Austrian oak, followed by a passage in cement tanks until bottling.
At sight, Barolo Castelletto presents itself with an intense garnet red color. On the nose it offers a complex bouquet with notes of ripe red fruit, spices, tobacco and hints of rose. In the mouth it is structured and deep, with fine tannins and a pleasant freshness that accompanies a long and persistent finish.
This quality red wine pairs perfectly with game dishes or mature cheeses.
