Description
Barolo Cannubi is produced by Pico Maccario, a company founded in 1997 by the brothers Pico and Vitaliano Maccario. It produces wines from the main Piedmontese denominations: Langhe, Monferrato, Gavi, Barolo and Barbaresco.
It consists exclusively of Nebbiolo grapes which are destemmed and gently pressed. Vinification takes place in thermo-controlled steel tanks and maceration on the skins lasts 20 days. The wine thus obtained then ages in 500l French oak tonneaux for 18 months, followed by a further 12 months of aging in the bottle.
Ruby red in color with garnet hues, it reveals to the nose a bouquet of aromas of red fruit such as cherry, with notes of cocoa and tobacco. The sip is full, compact and structured, with a persistent finish.
It is the ideal wine to pair with risotto with truffles and stewed game. Try it with a platter of seasoned salami.
