Description
Barolo Cannubi di Borgogno is born in vineyards located in the homonymous Cru di Barolo, considered the best of the entire appellation, for exposure and microclimate, and also the most renowned.
It is obtained from pure Nebbiolo grapes, harvested and selected only by hand. Fermentation takes place, with maceration in contact with the skins, in stainless steel tanks at a controlled temperature of 22-29 °C for 12 days. After malolactic fermentation, carried out at 22 °C for 15 days, the wine ages 4 years in Slavonian oak barrels and in the bottle for the following 6 months.
Barolo Cannubi di Borgogno has a ruby red color that acquires slight garnet shades with the passage of time. A refined bouquet of red fruit immediately jumps to the nose, enriched by pleasant spicy hints of licorice and tobacco. On the palate it is well balanced, with notes of truffles, ripe red fruit and spices that accompany towards a harmonious and persistent finish.
Perfect to accompany first courses with meat sauce and red meats, this Barolo is ideal in combination with game, braised meats and aged cheeses.
