Description
Cascina Valle Asinari's Barbera d'Asti Superiore is a full-bodied red wine, produced with 100% Barbera grapes from the upper part of the vineyard in San Marzano Oliveto, Piedmont. The vineyards are located at an altitude of 300 meters with southern exposure, on sandy and loamy soils.
The vinification takes place through spontaneous fermentation in concrete tanks for about 12 days, using only indigenous yeasts. After fermentation, the wine is drawn off and pressed, then returns to the concrete tanks to complete malolactic fermentation. The refinement takes place in large oak barrels, partly French and partly Slavonian, with different toastings (the so-called "Pauscha cut").
It has an intense ruby red color. On the nose the bouquet is imposing and complex, characterized by a marked spiciness and an explosive fruit. In the mouth it is powerful, round and mineral, with a solid structure and a long persistence.
This Barbera d'Asti Superiore pairs perfectly with red meats, braised meats and mature cheeses.
