Description
Barbaresco di Sabaudo is a red wine produced entirely with Nebbiolo grapes from 4 municipalities in the Barbaresco area. This wine best expresses the unique characteristics of its territory of origin, representing a refined and structured example of the Barbaresco denomination. The label depicts Pius IX, Pope from 1846 to 1878, initially a reformist, then an opponent of Italian unification, he faced the loss of temporal power with the capture of Rome in 1870.
The vinification involves a pressing and destemming followed by fermentation in stainless steel with temperature control at 28°-30°C. The maceration of the skins lasts 12 days with daily pumping over. The malolactic fermentation is carried out completely. The wine is aged for a minimum of 26 months, of which at least 9 in wooden barrels.
This Barbaresco stands out for its ethereal aroma with balsamic notes. On the palate it is elegant and persistent, with an excellent structure that enhances the complexity of Nebbiolo. Its elegance and depth make it a wine of great charm.
Ideal when paired with pheasant, pigeon, roast turkey, ossobuco and mature cheeses.
