Description

Barbaresco Riserva Pajè , an authentic expression of the Barbaresco territory in the Piedmontese Langhe, is produced exclusively with Nebbiolo grapes selected from the vineyard of the same name. This area is characterized by a clayey-limestone soil enriched by sand and a privileged south-west/west exposure, which together contribute to giving the wine a distinctive quality and complexity.

The controlled fermentation takes place in steel at 30°C for 28 days, allowing a long maceration on the skins to extract colors and aromas. Aging takes place for 30 months in oak barrels before spending 12 months in the bottle, thus ensuring the perfect balance between aromatic and structural complexity.

Visually, the wine presents a ruby red color. On the nose, it reveals intense, spicy aromas and a lively expression of young and fragrant fresh fruit. The palate is greeted by a medium body and supported by good freshness, leading to a rich and persistent finish.

This wine pairs beautifully with structured first courses, red meats and game, taking advantage of its structure and complexity to complement and enrich each dish.
