Description

The Barbaresco Bordini, produced by the La Spinetta winery, shows the gentlest face of Nebbiolo, painted by the refined and delicate trait of the Barbaresco land that responds to the province of Asti.

It comes from the vineyard of the same name, located near Neive at 270 meters above sea level. It extends over a surface of 4 hectares, defined by a soil mainly with limestone matrix. Fruit of a sustainable and pesticide-free agriculture, Nebbiolo grapes are harvested manually during the month of October. About 7 - 8 days of alcoholic fermentation precede malolactic fermentation in oak barrels, in which aging is also carried out for a period of about 20 months. After passing through steel tanks, where it stays for 3 months, it is bottled without filtration. 4 years after the harvest, it is presented on the market.

Ruby red in the eye. The perfume heralds a complexity to be developed over the years. Red fruit such as currant and raspberry emerges, notes of dried fruit and a spicy texture. In the mouth it shows a full body to support the vivid freshness and smooth tannins. It closes in a spicy memory of ginger.

Ideal as an accompaniment to a pigeon breast in red fruit sauce.
