Summary
Description
The Barbaresco Coste Rubin di Fontanafredda is part of the “Fuoriclasse” collection and is born on the hill slopes of the municipalities of Treiso, Barbaresco and Neive. The vineyards are mainly exposed to the south and south-west and rest on marly and limestone soils.
Following de-stemming, the extracted must is sent for fermentation, which takes place at a temperature of 30–32ºC. Maceration on the skins lasts 10–12 days, followed by malolactic fermentation. Ageing takes place in barriques and in 20 and 30 hl Allier oak barrels, where the wine remains for about a year. After a short period in stainless steel tanks, the wine completes the ageing process in the bottle.
In the glass, the wine has a light ruby red colour with evident garnet reflections. On the nose there are hints of violets, ripe plums and blueberries, notes of cinnamon and tobacco. The full-bodied sip reveals well-structured tannins and final notes of licorice and cinnamon.
Ideal in combination with important dishes based on red meats and game and medium and long-aged cheeses.
