Description
This Asolo Prosecco Extra Brut from Soligo is produced only with grapes from the historic hill known as Col de Mez.
The grapes are harvested by hand in September. In the cellar, the bunches are softly pressed and a slow fermentation then begins in steel tanks using selected yeasts. It is sparkling with the Charmat method.
Straw yellow with greenish reflections, it is expressed on notes of fresh fruit that recall lime and grapefruit, accompanied by pleasant hints of acacia and almond blossoms. On the palate it is savory and fresh, with floral returns.
Perfect to accompany fish appetizers and with herb risotto, it is ideal in the company of grilled vegetables.
