Description
Karasì is produced with the Areni variety, which has been widespread in Armenia for millennia.
Coming from the province of Vayots Dzor, this variety is suitable for large temperature ranges and high altitudes. Precisely with altitudes reaching 1400 meters above sea level, the vines grow on sandy and calcareous soils and are harvested towards the end of October. The wine ferments in concrete tanks at controlled temperatures with the use of indigenous yeasts, exploiting a process of micro-oxygenation before being transferred to terracotta amphorae in which it refines for about 12 months. A further 6 months bottle ageing follows.
Bright ruby colour, it has direct and powerful hints of red fruits such as blackberry and a charge of Mediterranean herbs interspersed with a rich spiciness. Savoury and fresh, it brings back notes of black currant and black pepper, with some earthy hints for a full and harmonious body, well slender and provided with polite tannins.
Wine to be consumed with grilled meats such as lamb and pork, it also goes well with stews and first courses based on savoury white meat sauce and fennel.
