Description

The Chardonnay Savagnin Amphore is produced by Domaine André et Mireille Tissot, located in Montigny Les Arsures, in the Jura region. The winery was founded in 1962 by André and Mireille and is now managed by their son Stéphane Tissot and his wife Bénédicte, who cultivate the 35 hectares of vineyards following the principles of biodynamic agriculture. All the wines of the Domaine have a low dose of added sulphites, compared to the average of most wines.

It consists exclusively of Savagnin grapes, which are destemmed by hand. The maceration on the skins lasts 6 months and 40% of the mass is kept in underground amphorae and for 3 months in above ground amphorae for the remaining 60%. The wine ages in amphorae and in wooden barrels for 10 months.

Orange in color, it expresses aromas of ripe fruit with yellow and white pulp on the nose, as well as notes of sweet, toasted spices and dried fruit. The sip is dry and full-bodied, slightly tannic and with a savory and persistent finish.

It goes well with cured meats, especially seasoned raw ham, and blue cheeses.
