Description
Cesari's Amarone della Valpolicella Classico comes from vineyards located in the municipalities of Negrar, Marano di Valpolicella, Sant'Ambrogio, Fumane and San Pietro in Cariano, in the historic area of Valpolicella.
It is mainly produced with Corvina Veronese grapes and with Rondinella and Rossignola grapes, harvested manually in boxes and left to dry in the fruit cellar in order to increase the sugar concentration. Fermentation takes place, with maceration in contact with the skins for 20-30 days, in stainless steel tanks at controlled temperature. After malolactic fermentation, the wine undergoes a 36-month maturation period, 12 of which in Slavonian oak barrels and a small part between French oak barrels and tonneaux.
In the glass it has an intense purple red color. The nose opens with a complex bouquet, with notes of cherry and plum in jam, together with sensations of vanilla and toasted. On the palate it is full and harmonious, balanced, warm and persistent.
Perfect to accompany game, grilled and stewed meat, this Amarone is ideal as a meditation wine.
