Description
Amarone della Valpolicella Riserva I Saltari from the Sartori winery in Verona is produced from a 6-hectare vineyard located 230 meters above sea level, in the Val d'Illasi. The vines, which are about 20 years old, are grown on calcareous-clayey soils with volcanic features, ideal for growing grapes intended for drying. The blend includes Corvina, Corvinone, Rondinella and Croatina, selected to create a wine of great complexity.
The grapes, harvested by hand, are placed in crates and left to dry for about three months in environments with controlled humidity, losing 30% of their weight. The vinification takes place in stainless steel tanks, with a long maceration of 20-30 days. After malolactic fermentation, the wine ages for 48 months in barrels of different sizes, followed by a further refinement in the bottle for at least one year, thus ensuring an excellent tannic and structural evolution.
It has an intense purple-red color. On the nose, spicy notes of dried figs, morello cherry and aromatic herbs emerge. In the mouth it is elegant and enveloping, with soft tannins, a balsamic touch and a balanced and velvety persistence that makes it particularly refined.
This Amarone pairs perfectly with stews, grilled red meats, game and mature or slightly spicy cheeses.
