Description
Amarone della Valpolicella by Famiglia Pasqua is a wine that expresses all the elegance and tradition of Valpantena. The grapes, carefully selected, come from vineyards that benefit from an ideal climate and a suitable soil. The blend is composed of Corvina, Rondinella and Corvinone, varieties that give structure, complexity and an extraordinary capacity for aging.
The grapes are harvested by hand in mid-September and left to dry for about three months, losing 25-30% of their weight to obtain a greater aromatic concentration. After pressing, the must ferments in steel for 25-30 days at a controlled temperature, with regular punching down to extract color and tannins. The wine is then transferred to new French oak barriques, where it undergoes malolactic fermentation and ages for 18-20 months before a further four months of bottle aging.
It has an intense and brilliant red color. The bouquet is refined and complex, with hints of fresh red fruit, black cherries and delicate vegetal nuances. On the palate it develops with elegance, revealing balsamic notes and medicinal herbs, while the tannins are silky and velvety, contributing to a long and harmonious finish.
This Amarone pairs perfectly with braised meat dishes, game and mature cheeses, enhancing each pairing with its enveloping structure and its rich and intense aromatic profile.
