Description
The Amarone della Valpolicella from the Collection of the Count of Villa da Filicaja originates from the vineyards of the municipalities of San Pietro in Cariano and Negrar, in the province of Verona.
It is produced starting from the typical Amarone blend: Corvina Veronese in the majority, then Corvinone, Rondinella and Croatina. The grapes are harvested by hand and subjected to a period of drying. Fermentation takes place in steel for 50 days, after 30 days of maceration on the skins. The wine is aged for 30 months in Slavonian oak barrels and for a further 3 months in the bottle before being marketed.
It is characterized by an intense ruby red color with garnet reflections. The nose is complex and intense, with notes of red fruit alternating with elegant spicy hints. On the palate it shows balance and good tannins, which make use of a remarkable structure.
Excellent to accompany braised meats and game, it goes well with all aged cheeses.
