Description

The Zymé winery is the creation of Celestino Gaspari, oenologist and profound connoisseur of the Veneto region. The property extends over about 30 hectares in the San Pietro in Cariano area, in a splendid hilly area. The limestone soils and the mild and breezy climate make up a perfect habitat for the cultivation of native red berried grapes.

Amarone Riserva Mattonara is made only in the best vintages and is born from an assembly of Corvina, Corvinone, Rondinella, Oseleta and Croatina grapes, coming from a selection of the oldest vineyards of the estate, located in Negrar and Sant'Ambrogio. The bunches are left to dry for three months in the loft, and then proceed to fermentation with the use of indigenous levites and long maceration on the skins. The wine ages for 9 years in oak barrels and tonneau and is then refined for a year in the bottle.

Intense red color, it expresses complex and rich aromas, with spicy notes, hints of currant jam, aromas of ripe cherry, plum and black cherry. On the palate it is characterized by dense and ripe aromas, with soft and evolved tannins. The finish is harmonious and very persistent.
