Description

The Amarone della Valpolicella Classico of Zýmé is born in vineyards located in the Veronese municipality of Negrar, in the splendid territory of Valpolicella.

It is produced with a skilful blend of Corvina, Corvinone, Rondinella, Oseleta and Croatina grapes, harvested by hand between the second and third ten days of September. After 3 months of natural drying, fermentation takes place, with maceration, in steel and cement tanks for 2 months. Subsequently the wine ages in Slavonian oak barrels for at least 5 years and ages for 12 months in bottle before being put on the market.

Zýmé Amarone della Valpolicella Classico has an intense ruby red color, developing garnet reflections with aging. The nose opens with pleasing sensations of ripe cherry, maresca and slightly dried plums, enriched with spicy notes. On the palate it is sapid and enveloping, tracing the scents perceived on the nose and developing delicate notes of pepper, licorice and cocoa, with aging.

Perfect to accompany roasts and stewed meats, it is ideal in combination with typical Venetian seasoned cheeses such as Parmigiano Reggiano or Grana Padano.
