Description
Amarone della Valpolicella Classico Famiglia Farina produced by the Farina company is a wine that celebrates the excellence of tradition and the bond with the family. The grapes come from vineyards located between San Pietro in Cariano, Marano, Mazzano and San Peretto di Negrar, at an average altitude of 350 meters. The varieties used are Corvina, Corvinone, Rondinella and Molinara, grown on predominantly calcareous soils with gravel or stratified with basalts.
The grapes are harvested by hand and subjected to a natural drying process for about 100 days. After destemming and pressing, a cold maceration and a long fermentation in stainless steel follow. The alcoholic fermentation ends in cement tanks, while the malolactic fermentation occurs spontaneously. The wine ages for 24 months in Slovenian oak barrels, with a final refinement in the bottle for at least six months.
Dark ruby in color with garnet highlights, this Amarone offers ethereal aromas of black cherries, spices, cocoa and balsamic notes. On the palate it is warm, dry, velvety and full-bodied, with a powerful but elegant structure.
It is an ideal wine to accompany game, braised meats and mature cheeses, but it pairs equally well with pumpkin or porcini mushroom risotto, as well as flavourful vegetarian dishes such as seitan.
