Amarone della Valpolicella Classico Riserva De Buris is a highly prestigious Italian red wine, produced in the Sant'Ambrogio di Valpolicella area by Tommasi. The grapes used, from vines of about 30 years located at 250 meters above sea level, include Corvina, Corvinone, Rondinella and Oseleta. The clayey and calcareous soil, with little vegetal cover and rich in limestone and potassium, contributes to the extraordinary quality of this wine.
Production begins with a manual selection of the grapes, followed by a 110-day drying period on bamboo racks in a ventilated fruit cellar. Fermentation takes place slowly for a month in oak vats with indigenous yeasts, preceded by a cryomaceration. Aging includes a year in Slavonian oak barrels, followed by another five years in oak barrels from the ancient Villa De Buris cellar and a period of rest in the bottle.
This Amarone stands out for its intense red color with garnet hues and a complex bouquet that ranges from plum and black cherry to notes of tobacco, cocoa, spices and licorice. On the palate it offers warmth and power, with a harmonious balance and a long and refined finish. Its softness and elegance offer an unforgettable tasting experience.
Ideal to pair with structured dishes such as roasts, braised meats and mature cheeses, enhancing their intense flavours. Particular when paired with dark chocolate.
