Description
The Amarone from the Pruviniano Collection originates in the vineyards of the Prognol hamlet of the Domìni Veneti estate, in the Marano della Valpolicella valley, from land that until 1177 carried the name Pruviniano.
The grape harvest that forms the classic blend of Amarone takes place between the months of September and October, followed by a period of drying in the fruit cellar which lasts until January. Fermentation takes place with slow maceration for 30 days, of which 12 at low temperature. Once the malolactic fermentation is over, it undergoes an aging first in oak barrels of 18 months and another 6-8 months in bottle.
Wine with a charming garnet red color, it has an intense aroma of black cherry in spirit and dried plums, enriched with a night of vanilla, leather and nutmeg. In the mouth it is rich and structured, very soft, with a toasted and dried fruit aftertaste.
Fabulous on braised and aged cheeses, it goes well with all game-based recipes. It is also ideal as a meditation wine or to accompany the conviviality of a meal.
