Description

This Pas Dosé vintage sparkling wine comes from vineyards located on the marly and limestone-clay soils of Rodello, in the Alta Langa. The grapes used are Pinot Noir and Chardonnay, grown strictly according to the classic method.

The harvest takes place manually between the end of August and the beginning of September. After delicate pressing, only the flower of the must is used. Fermentation takes place in steel vats at a controlled temperature for 28 days. The wine ages in steel for a few months with weekly bâtonnage. The refermentation in the bottle lasts approximately 60 days, followed by aging on the yeasts for a minimum period of 30 months.

The color is bright golden, with fine and persistent perlage. On the nose, aromas of ripe citrus fruits, dried fruit and honey emerge. On the palate, the wine is creamy and with a fresh flavor. It closes with an elegant, persistent and complex finish with notes of minerals and citrus fruits.

It is excellent as an aperitif and fits perfectly throughout the meal.
