Description
This Alta Langa di Monsignore is a metodo classico extra brut, produced with an assembly equally divided between Pinot Noir and Chardonnay, grown on the lands of the ancient property of the bishop of Mondovì, in Piedmont. The label is designed by the artist Francesco Clemente, reflecting the owners' passion for art.
The production includes manual harvesting and the assembly takes place with a soft pressing and a yield of 65%. The fermentation takes place in oak barrels, followed by a 36-month refinement, giving complexity and balance to the wine.
This classic method sparkling wine presents itself with fine and persistent bubbles. Notes of ripe white fruit and bread crust emerge on the nose. The palate is creamy and fresh, with an enveloping finish.
It pairs perfectly with fish dishes, white meats and soft cheeses.
