Description
Giulio Cocchi's TotoCorde is the top Langa of the production range that combines the centuries-old Piedmontese Metodo Classico tradition with the structure and power of the grapes grown in the appellation.
It is a cuvée composed mostly of Pinot Noir grapes and completed by Chardonnay grapes, harvested by hand in small boxes. The fermentation takes place inside steel tanks for 3 weeks. Followed by second fermentation in stacked bottles which foresees a long maturation of 4 years in the cool and dark of the cellar, with remuage on wooden pupitres and rigorously à la glace degorging.
Pale straw yellow in colour, it is characterized by an olfactory spectrum entirely centred on seductive notes of candied citrus. The taste, material and satisfying, turns towards a wide and fragrant finish that closes on fine citron flavours.
Delicious in the company of delicate appetizers and all the preparations based on crustaceans and molluscs.
