Description
Pas Dosé is Cocchi's Blanc de Noirs, obtained exclusively from Pinot Noir grapes, harvested manually in crates, with a high concentration and initial acidity that will allow the final bubble to face unthinkable periods of refinement.
After the 3-week fermentation in small steel vats, according to the Cocchi style, this sparkling wine is sent to the second fermentation and remains to refine on its lees in the bottle for at least 80 months, with manual remuage on wooden pupitres and disgorgement à la ice.
Intense straw yellow in colour, it releases a scent that varies from fresh hazelnut to candied white fruit. The taste is compact and elegant, like the best Pinot Noir wines, enriched with freshness and sapidity, vigorous but well balanced.
Excellent as an aperitif, it goes well with dishes composed mainly of seafood.
