Description
The Alta Langa Diavoletto by Casa E. di Mirafiore is a sparkling wine made from 70% Pinot Noir and 30% Chardonnay sourced from vineyards located in Serralunga d'Alba. These vineyards, facing east and situated at an altitude of 250-300 meters above sea level, are characterized by soils composed of white clays interspersed with layers of calcareous sands, which give the wine a particular complexity and structure.
After being harvested in small 20 kg crates, the grapes are immediately taken to the winery and subjected to a soft and gentle pressing, yielding about 50% of the must. The must is then transferred to temperature-controlled tanks for a 24-hour settling period. Subsequently, fermentation begins in stainless steel tanks at temperatures between 18 and 20°C for about 20 days. The wine rests on the lees until the following spring, when it is ready for a second fermentation in the bottle, followed by maturation on the lees for 36 months in a cool and dark environment, according to the traditions of the Metodo Classico.
In the glass, the wine appears straw yellow with light golden reflections and a fine, persistent perlage. The aromas of white-fleshed fruit, dried fruit, and bread crust are enhanced by the creaminess of the mousse. On the palate, the structure of the Pinot Noir is immediately perceived, with a long persistence, freshness, and excellent sapidity that linger in the mouth.
Ideal to serve as an aperitif or to accompany refined fish and shellfish dishes.
