Description
The Alta Langa Blanc de Noir by Casa E. di Mirafiore is a sparkling wine produced with 100% Pinot Noir grapes from vineyards located in Serralunga d'Alba. These vineyards, facing east and located at an altitude of 250-300 meters above sea level, are characterized by soils consisting of white clay interspersed with layers of calcareous sand, which give the wine a particular complexity and structure.
After being harvested in small 20 kg crates, the grapes are immediately taken to the cellar and subjected to a soft and delicate pressing, obtaining approximately 50% of the yield in free-run must. The must is then transferred to temperature-controlled tanks for a 24-hour decantation. Fermentation then begins in steel tanks at temperatures between 18 and 20°C for approximately 20 days. The wine rests on the lees until the following spring, when it is ready for a second fermentation in the bottle, followed by maturation on the lees for 36 months in a cool, dark environment, according to the traditions of the Classic Method.
In the glass, the wine has a straw yellow color with light golden reflections and a fine and persistent perlage. The aromas of white pulp fruit, dried fruit and bread crust are enhanced by the creaminess of the foam. On the palate, the structure of Pinot Noir is immediately perceived, with a long persistence, freshness and excellent flavor that remain in the mouth for a long time.
Ideal to serve as an aperitif or to accompany refined fish and shellfish dishes.
