Description
The Alta Langa Blanc de Noir is a bubble that reflects the production philosophy of Casa E. di Mirafiore in its contribution of novelty and freshness to a strictly traditional character. It is born from the vineyards of Serralunga d'Alba, characterized by soils rich in white clays interspersed with limestone and sandy layers.
The Pinot Noir clusters are collected and placed in small crates with which they are transported to the cellar where a soft pressing takes place from which the flower must is obtained which will undertake the vinification process. Refermented in the bottle according to the dictates of the Classic Method, resting on its own yeasts for 36 months which would make it a reserve in all respects.
Straw yellow in the glass, it has a minute and persistent perlage. On the nose it fascinates with its hints of white pulp fruit, dried fruit and bread crust. In the mouth the structure of Pinot Noir rises in all its splendor, almost eating, contrasted by the creaminess of the foam which causes an immediate kidnapping of the senses. The long savory persistence makes the overall experience unforgettable.
To be combined with important dishes of oily fish such as tuna or salmon, it is divine on courses based on poultry.
