Description
The Cielo d'Alcamo sweet wine from Tenuta Rapitalà owes its name to the poet Cielo d'Alcamo, who lived in the Palermo court of Frederick II in the 13th century.
It consists of Catarratto grapes, harvested late with partial presence of noble rot on the berries. The grapes are vinified with soft pressing and cold static decantation. Fermentation lasts a few weeks in small thermoregulated steel containers. The wine is aged for 10-11 months in oak barrels.
Golden in color, it expresses aromas of ripe yellow fruit, dehydrated fruit and sweet spices on the nose. The sip is warm, ample and persistent.
It goes well with blue and seasoned cheeses, with dry pastries, in particular with those based on almond paste.
