Description

Damaschito by Grifalco is a red wine made from 100% Aglianico grapes cultivated in organic farming in the vineyard located in the area of the municipality of Maschito, in the heart of Vulture. The harvest is done manually with a careful selection in the vineyard, followed by a second sorting in the winery using an advanced linear destemming system, which allows for the elimination of any green residue and preserves only perfectly ripe grapes.

The winemaking process involves gentle crushing and fermentation in Slavonian oak barrels, with a controlled temperature that never exceeds 28°C. Maceration lasts over 60 days, allowing for optimal extraction of color, structure, and aromas, while malolactic fermentation occurs naturally. The wine then ages for a period between 12 and 18 months in Slavonian oak barrels, before an additional resting period in the bottle of at least 12 months.

In appearance, it has a deep and brilliant ruby red color. The bouquet expresses all the depth of the grape variety and the terroir of Maschito, with mineral notes of embers and smoke, aromas of cherry and floral hints, accompanied by touches of black pepper and undergrowth. On the palate, it is broad and determined, with a solid structure, notes of graphite and iron, sweet tannins, and a vibrant acidity that supports the persistence and balance of the wine.

It pairs perfectly with game, braised meats, and aged cheeses, enhancing their complexity with its elegant depth.
