Description

Daginestra by Grifalco is a red wine made from 100% Aglianico grapes grown organically in the vineyards located in the municipality of Ginestra, in the heart of Vulture. The harvest is done manually with careful selection in the vineyard, followed by a second sorting in the winery using an advanced linear destemming system, which allows for the removal of any green residues and preserves only perfectly ripe berries.

The winemaking process involves a gentle crushing and destemming, followed by fermentation in Slavonian oak barrels, with a controlled temperature that never exceeds 28°C. Maceration continues for over 60 days, allowing for perfect extraction of color, structure, and aromas, while malolactic fermentation takes place naturally. The wine then ages for a period of 12 to 18 months in Slavonian oak barrels, before undergoing further resting in the bottle for at least 12 months.

Visually, it presents with a deep and brilliant ruby red color. The bouquet is rich and complex, with notes of crunchy red fruit, an iron vein, hints of cocoa, rosehip, mint, and fern. On the palate, it is mineral, broad, and structured, with fine tannins and excellent acidity that support its length and persistence, providing balance and depth.

It pairs perfectly with game, slow-cooked dishes, and aged cheeses, enhancing their richness with its complexity and elegance.
