Description

The Sigillo of Cantine del Notaio is a wine able to fully express the character and grandeur of Aglianico del Vulture.

Harvesting is done manually between the last ten days of November and the first week of December, after a period of over-ripening on the plant like an Amarone. A 30-day maceration allows full extraction and complete maturation of the tannins. The wine ages in French oak tonneaux for 24 months, and then remains to refine another 24 months in the bottle.

Bright garnet red in color, it expresses itself on the nose with tones of wild berries in jam, cocoa and black pepper. On the palate it is a combination of opulence and elegance, with a soft entry that is a prelude to a velvety and persistent body, with a spicy finish that recalls notes of licorice and dark chocolate.

It is a wine that requires well-structured dishes or the combination with cheeses with a great aromatic persistence. Try it with sweets made with melted bitter cocoa.
