Description
The Gricos by Grifalco is a red wine made from 100% Aglianico grapes grown organically in vineyards located in the municipalities of Venosa, Maschito, and Forenza, in the heart of Vulture. The vines, aged between 10 and 30 years, root themselves in a volcanic terroir. Harvesting is done manually with careful selection in the vineyard and a second sorting in the winery using an advanced linear destemming system, which allows for the use of only perfectly ripe berries.
The winemaking involves a gentle crushing and destemming followed by fermentation in stainless steel tanks at controlled temperatures, never exceeding 28°C. After racking, the wine ages on fine lees in American oak barriques and second-pass French oak tonneaux for a period of 6 to 12 months, during which malolactic fermentation takes place. Subsequently, the mass is stabilized in steel before bottling, followed by further aging in the bottle for at least 4 months.
Visually, it presents a ruby red color with violet reflections. The bouquet is characterized by intense aromas of crisp red fruit, mineral and floral notes, cherry, and black pepper, with a subtle hint of underbrush. On the palate, it is elegant and well-balanced, with a fine structure and vibrant acidity that enhances its drinkability. The finish is long and harmonious, with echoes of graphite and spices.
It pairs perfectly with game dishes, braised meats, and aged cheeses, enhancing their complexity with its lively freshness.
