In the tropical regions of the new world, in the Carribean, sugar cane became the first raw material for Rum production, whereas in Central America agave's heart was used to make Tequila.

Anywhere in the world, essential eau de vie production phases are must preparation, starting from raw materials, fermentation, distillation and final stabilization, possible ageing in barrel.
